was wondering the preferred method of removing old tips i.e.
mushroomed, and or flattened beyond reshaping

I use a pearing knive while the shaft is installed in the Willard on the grinding wheel side, and use a magnifying hood so-as not to miss the bond line/miss the ferrule...sid

Utility knife for me.
You can also trim the mushroom with a good utility knife blade.

I pull the tip off with a pair of pliers, being VERY careful not to get too close to the ferrule and risk scratching it. I do this to see how good the previous glue bond was, plus I find it is the fastest method to remove a tip. One exception is when there is a pad under the tip and the customer wants to keep it. In that case, I will use a utility knife blade to remove the tip, so I won't risk ripping the pad off when removing the tip.
