Ingredients
These are the brands I used from local grocers. Similar brands are available all over if these aren't.
One 15 oz can Amy's Simply Organic refried beans.
One 15 oz can Amy's Simply Organic salt free tomatoes.
One cup cooked rice.
One package Amy's Simply Organic fajita mix.
One pound ground buffalo.
6 ounces of water or beer.
1 chipotle pepper.
1 ounce of diced onions.
1 ounce diced green pepper.
1 ounce diced banana pepper.
1 ounce brown sugar.
Mix fajita mix, beer, refried beans, and tomatoes and brown sugar. Bring to a medium heat for about 5 minutes. Mix in browned ground buffalo and let sit for 2 hours after removing from heat.
Reheat and mix in about 1 new ingredient per minute and add the rice last. Cook for 1-2 more minutes.
Place on fajita wrap and add cheese of choice sparingly.
As a tip, this will not be an uber hot taste as specified. Before mixing in the rice blend in hot sauce to desired level of flammability.
Emjoy.
I have become a bit of a buffalo fan lately, and get it here for $6.49 lb at the Dorothy Lane Market in Springboro.
